Do you know, Manchego?

Alright, alright, Its time we brought out the big guns…We all know a thing or two about your average platter cheese’s but do you know, Manchego?
This delicious fruity, yet tangy Spanish cheese is a real table taker. A sheep’s milk cheese, which is produced from a combination of pasteurised and unpasteurised milk from the Manchega sheep. Much like Champagne this semi-soft cheese is exclusive to the region of La Mancha and boy, do I wish I could high five all the farmers from this region because, My Gosh! It is delicious!
Manchego has a very distinctive inedible, zig zag rind which comes from the (once seagrass basket) moulds that it ages in. The age of the cheese reflects its taste and texture, ranging from 2 months to 2 years there are four categories, Fresco, Semi-Curado, Curado & Veijo.
Hot tip – Pair it with fig, eat it on its own or with some fresh bread. This bad boy is one to whip out when you want to impress your guests.
